This workshop is being taught step by step, however it's not designed for decorators with no experience. To get the best from this class you should have already mastered the basics such as layering, ganaching and covering cakes.

Workshop Description:
​
This exclusive two-day masterclass offers the rare opportunity to learn from the reigning Australasian Haute Couture Wedding Cake Designer of the Year. Terresia Welch will pull back the curtain on the innovative techniques that have allowed her to dominate the industry year after year. 

This masterclass contains hands-on, demonstration and theory elements, it is packed full of techniques, tips, secrets and advice. Topics include taking a professional client brief, design creativity through to delivery.  Your workshop is inspired by Terresia's 2025 award-winning statement cake, a French chateau-themed "Easter Wonderland" masterpiece featuring opulent florals, flourishes, hidden arches and rotating mechanised elements that captured the hearts of an elite panel of world-famous judges. However Theresa may also incorporate elements from her other most in demand designs. 


Due to the extensive content being taught in this class and to ensure you can transport your work home, you will be working on a precovered 3 tier polystyrene base. You won't physically use a rotating mechanicism, however Terresia will explain how she created this and what she used. 
 

After this workshop your mind will be open to a whole new level of creativity and possibilities.

MASTERCLASS HIGHLIGHTS

Techniques and Skills You Will Learn: 


  • How to Manage Expectations and Price for Profit: How to take, dissect and deliver the client brief, manage reality, expectations and the importance of pricing for profit
  • Structural Engineering: Master the art of tall cake structures and learn how to build and support the signature hollow archways found in Terresia's grandest designs. 
  • Royal Icing Artistry: Learn the trending delicate technique of hand-piped lace, a hallmark of haute couture wedding cakes
  • Botanical Sugar Art: You will create both 2D and 3D sugar flower decorations including the creation, colouring, dusting, arrangement and placement of Terresia's signature large, wired statement blooms and delicate complimentary smaller accents.
  • Award-Winning Flourishes: Step by step guidance on replicating 3D flourish elements that will transform your cakes into a unique statement designs that will make "eyes pop" 
  • How to Transport Large Intricate Cakes: How to store cakes and the best methods to use for shipping or transporting cakes 

​Prerequisite:  This workshop is suitable for those who have mastered the basics. It's intermediate level and above.

About Your Teacher:

Multi award-winning Terresia has had an obsession with food from a very young age, inspired by a family whose love of food, creativity and imagination seemed to go hand in hand. Her culinary passion, art background and a curiosity in the science of food, has culminated in her being able to design and construct stunning edible art which over the years has resulted in a number of prestige awards. 

These have included being voted by the public, her peers and high profile industry judges as the ACADA Australasian Haute Couture Wedding Cake Designer of the year in 2021, 2024 and 2025.  Her unique designs are now recognised and admired across the world. 

WORKSHOP FAQ

Limited Student Numbers & Class Timing:

This workshop has limited student numbers to ensure the very best tuition possible. The times given are guidelines. We understand all students work at different speeds, however in a workshop situation it's important you try to keep up. If you do, you'll go home with a finished project. If not, you will have learned the required skills and have some homework to complete. As with all workshops class times are approximate. We cannot guarantee all classes will finish on time.

What You'll Take Home:

At the end of your workshop we'll provide you with a box to safely transport your project home. Be super proud, we'd love to be there to see the expression on your friends' and family's faces. What you'll be making in this workshop is guaranteed to "WOW"!  

​Workshop Ticket Inclusions: 

Your workshop ticket includes a 3 day International Cake Show Australia pass valued at $75.
You DO NOT need to buy a separate show entry ticket.  Your workshop ticket gives you access to all areas of the show other than the paid areas such as workshops, mini classes, paid business demonstrations and Vendors/Sponsors and Cake Artists Welcome Cocktail Party. These are separate ticketed items.

Your workshop ticket includes express show entry, access to all stages, more than 100 free demonstrations, all the huge sugar features including the new walk through "Le Fete Fantastique" and "Florals & Fairies" Global Sugar Artists Features, Battle of the Sugar Giants (huge sugar Features), The Ultimate Australian Cake, Cookie & Sugar Craft Competition display, Haute Couture Wedding Cake Designers Marquee, Wedding Cake Wars, the International Cake Off Challenge being held on the Superstar Stage (this year the best extreme cake sculptors from Australia, India, Japan and Taiwan are competing). You have access to all the shops including sweet street. It gives you all the free activities held at the show across all three days (Friday, Saturday & Sunday). 

What's Provided: 


Everything you need to complete your class is provided. All tools, equipment and ingredients are provided are for use during your workshop only. Unfortunately, these can't be taken home. They need to be left at the end of your workshop, as they are needed for the following classes. If you wish to purchase any of the tools or equipment used, they will be available at various vendor stands at the show. Many of the vendors will be selling at highly discounted prices, so you'll be able to pick up lots of bargains. Your teacher will explain the products used, what you need, and ways you can improvise where possible.

What You Need to Bring: 

You need to bring an apron, a bottle of water if needed, a light lunch and a smile.

Every workshop is packed full of invaluable skills, techniques and tips you'll use for many years to come, they're also lots of fun. Why not consider inviting your bestie to come share in your funfilled learning experience. 
Tea, coffee, lunch or snacks will also be available for you to purchase at the cafe at the show or within the venue facility. It's a condition of the venue's food safety standards, that these aren't provided directly to you by ACADA. 

What if you book a class then see something another class you prefer, can you transfer? 

Yes of course you can, providing there are places available and your new class is of a similar value. If not you'll need to pay the difference. You are able to swap classes up until 14 days prior to the show, providing spots are still available. 

Cancellation Policy: 

In the event there aren't sufficient student numbers to make the class economically viable, or the teacher is unable to make it due to being unwell we will provide you with as much notice as possible and provide you with the choice of an immediate 100% refund or option to transfer into another workshop, the choice is yours!

​In the event you aren't able to make it you are welcome to transfer your ticket to someone else. We begin preparations for the workshops months before the show, therefore refunds unfortuantely aren't available. If you need to transfer your ticket to someone else, please ensure you contact us to let us know, so we can welcome them. ​
