This workshop is an introduction to royal icing and how to pipe 2D faces. It's suitable for all levels, including those who have no piping experiene at all. It's a great place to start your royal icing cookie journey!

Noelle will be teaching four separate 1-day royal icing cookie workshops at the show. We were indundated with requests to bring her to Australia.  Each workshop offers a different level of complexity. Although some techniques are common, they are all made differently on each day for a unique output on every cookie. 


Workshop Overview:
​
One of the most difficult aspects for a royal icing enthusiast to master, is piped and painted faces. In this workshop Noelle will teach you all the foundation "must knows" about royal icing, and how to pipe and paint character faces. You will also learn how to make Noelle's signature royal icing recipe and how to make it.

You'll be working on pre baked sugar cookies that have been hand-crafted using Noelle's cutters designed specifically for your workshop. 
During your workshop you will receive comprehensive notes, which will include Noelle's royal icing recipe and templates for all the cutters used. 

Noelle will demonstrate and teach you step-by-step how to pipe and paint a charming chibi cookie set. Your class focuses on layered piping methods using various icing consistencies and incoporates how to paint hair and eyes using highlights and shading to add depth and dimension. 

This is a fun class filled with learning opportunity. 

Techniques and Skills Taught: 

Noelle's Signature Royal Icing Recipe & Mixing Methods: 


  • Learn how to make royal icing from scratch, perfect for cookie decorating
  • Perfect the royal icing consistencies needed for 2D cookies: You will receive detailed instructions on how to achieve the right consistency for outlining, flooding, and filling 2D cookies, ensuring smooth, even layers without drips or runs. 
  • How to Mix: Ivory and "Bread colour" icing (other colours will be used, however they are basic colours which are far easier to achieve the hue). The techniques you will learn take colouring to the next level, and once learned are an invaluable tool to have in your cookie decorating toolbox

Piping Skills - Practice is an Important Element of Your Class: 

  • You will practice fundamental royal icing piping techniques using an icing sheet, before working on your cookies
  • Learn how to pipe clean lines, borders, and basic shapes to build control, precision and confidence
  • Understand how to fill designs smoothly and add delicate details

Face Makeup - How to Add Finishing Touches: 
  • You will add facial details, including blush, eyes, and a mouth to add expressions and personality to your cookie design. This is the fun part, where you will bring your cookie characters to life! 
  • You will learn how to master shading and lighting - Learn how to create natural shadows and highlights using gel colours and royal icing for a soft dimensional finish. 
  • This workshop is packed full of Noelle's signature tips and tricks.

​Prerequisite: 

This workshop is suitable for all experience levels, including beginners. It's a perfect place to start for those wanting to embark on their cookie decorating journey. There are no prerequisites.

About Your Teacher:

Noelle is multi-award winning cookie artists from Vietnam. She commenced her cookie journey more than 10 years ago. She was originally recognised for her extraordinary cookies which included super realistic, charicature and cute chibi (cartoon character) faces. Her 2D royal icing work is now widely recognised internationally. 

Her royal iced dimensional work has inspired a huge number of cookie enthusiasts. She is far too humble to say, however her work has attracted a large number of prestigious international awards incuding being named as a finalist for the 2024 D'Licious Magazine Awards.  Her classes are in huge demand worldwide. Noelle beleives her classes are not only about decorating cookies, they're about finding joy and meaning in inspiring others to start and throughout their creative journeys.

WORKSHOP FAQ

Limited Student Numbers & Class Timing:

This workshop has limited student numbers to ensure the very best tuition possible. The times given are guidelines. We understand all students work at different speeds, however in a workshop situation it's important you try to keep up. If you do, you'll go home with a finished project. If not, you will have learned the required skills and have some homework to complete. As with all workshops class times are approximate. We cannot guarantee all classes will finish on time.

What You'll Take Home:

At the end of your workshop we'll provide you with a box to safely transport your project home. Be super proud, we'd love to be there to see the expression on your friends' and family's faces. What you'll be making in this workshop is guaranteed to "WOW"!  

​Workshop Ticket Inclusions: 

Your workshop ticket includes a 3 day International Cake Show Australia pass valued at $75.
You DO NOT need to buy a separate show entry ticket.  Your workshop ticket gives you access to all areas of the show other than the paid activities such as the hands-on workshops, mini classes, paid business seminars and welcome cocktail party These are separate ticketed items.

Your workshop ticket includes express show entry, access to all stages, more than 100 free demonstrations, all the huge sugar features including the new walk through House of Horror,  competition display, cookie zone, bridal zone, sweet street, to all the shops and lots more. It gives you show access for all three days (Friday, Saturday & Sunday). 

Everything you need to complete your class is provided. All tools and equipment provided are for use during your workshop only. These can't be taken home. They need to be left at the end of your workshop, as they are needed for the following classes. If you wish to purchase any of the tools or equipment used, they will be available at various vendor stands at the show. Many of the vendors will be selling at highly discounted prices, so you'll be able to pick up lots of bargains. Your teacher will explain what you need and how you can improvise where possible, however they'll also tell you the best places to source any items you may need to purchase, if you want to recreate your project again at home.

Tea, coffee and cake (of course) is provided. 

What You Need to Bring: 

You need to bring an apron, a bottle of water if needed, a light lunch and a smile. Every workshop is packed full of invaluable skills, techniques and tips you'll use for many years to come, they're also lots of fun. Why not consider inviting your bestie to come share in your funfilled learning experience. 

What if I book a class then see something else I prefer, can I transfer? 

Yes of course you can, providing there are places available and your new class is of a similar value. If not you'll need to pay the difference. You are able to swap classes up until 14 days prior to the show. 

What if I can't make it, or the class is cancelled, will I get a refund?

In the event there aren't sufficient student numbers to make the class economically viable, or the teacher is unable to make it due to being unwell we will provide you with as much notice as possible and provide you with the choice of an immediate 100% refund or option to transfer into another workshop, the choice is yours! In the event you aren't able to make it you are welcome to transfer your ticket to someone else. We begin preparations for the workshops months before the show, therefore refunds unfortuantely aren't available. If you need to transfer your ticket to someone else, please ensure you contact us to let us know, so we can welcome them. ​
